Good morning, foodie friends.
I don’t know about you, but with weather like this, I’m reaching for my not-so-secret chocolate stash, fuzzy sweatpants and a glass of something that can warm me from the inside out (hot toddy, anyone?). And dinner is not going on the table unless it’s warm, saucy, gooey and filling. Cook it all in one pot so I don’t have to stay too long in my drafty kitchen? Even better.
This week, the features department offers up three one-pot comfort food meals, fit for any weeknight. We think — actually, we know — you’ll love them. How do we know? Well, for starters, these are time-honored, tested recipes on the most unforgiving food critics we know — our family members.
If you’ve ever wondered how we test recipes we share, (aside from those perfect America’s Test Kitchen recipes) I’ll let you in on a little secret: We do it at home, most likely during dinner time. There is no fancy newsroom test kitchen, (unless you count the crusty microwave we use to heat up the food so it doesn’t look cold in the photos) just our chaotic, often messy and busy kitchens. There are dogs running around, toddlers racing monster trucks and teenagers complaining they are hungry. Basically, we’re testing these things out in the same environment you’re probably cooking in.
Even my toddler knows the prettiest cookies, or the best scoop of dinner is saved for “mommy’s work,” to be schlepped into the office the next day for pictures. We always do the photoshoots in the morning, so I can finish the leftovers for lunch. That’s how good these recipes are.
