Manchester food blogger Aysegul Sanford will offer a class on making sweet potato noodle pad Thai via Zoom on Sept. 26 from 2-4 pm., presented by the Green Mountain Academy for Lifelong Learning.
Swap the rice noodles with sweet potato "noodles," add some other superfoods like ginger, garlic, unsweetened peanut butter, lime juice and tamari, and make a healthier version of a the popular classic dish. This version of pad Thai is vegan and gluten-free, and contains a perfect blend of ingredients for autumn.
