Margaret Button | Kitchen Comfort: Wedding cookies after a lovely wedding
Once upon a time, in a high school not that far away, four friends — Mary Lou, Jacquie, Barb and I — had a friendship with one another that could rival the one formed by Carrie, Samantha, Charlotte and Miranda in "Sex and the City." The major difference? We weren't having sex ("nice" girls didn't do that during our formative years, way back then) and we definitely weren't in "The City."
Over the years, we've each gone our own way. Mary Lou and I are still in North Adams, Barb is in New Jersey and Jacquie lives near Boston. Barb and I married and have children; Mary Lou and Jacquie pursued their careers; Mary Lou adopted a child. We have gotten together a few times in the decades since we graduated, but they have been way too far and in between. Life and families weren't too conducive in letting us get together.
And then Jacquie met the love of her life, Jerry, became engaged and got married. We, along with another good friend of ours, Paulette, were ecstatic to be invited to share Jacquie's special moment. We set up a group text line and texted almost constantly over the past month. What should we get for the group present? (That conversation took over a week to solve.) When would Barb get in town? Would we be able to go out Friday night? Should we carpool to the church and reception? In the last hour before the ceremony, we even took last-minute guesses at what the bride's dress would look like. (I won with my guess of "long, flowing and lacy.")
It was a small intimate wedding in a small beautiful local church (we all were wiping away tears of joy), followed by a reception at the Williams Inn. We sat together during dinner, close to the happy couple so she could join in. It was, once again, like we had never been separated. The party broke up around 11 p.m., but we took over a corner of the lobby of the inn. Fifteen minutes later, Jacquie came back down from their room and joined us. When we pointed out it was her wedding night, she waved her hand and said, "He'll be there." We did convince her to leave after an hour, it was after all her wedding night, but the rest of us talked for another two hours.
The next morning, the texts began again ... Such a special night ... love you ladies ... Best. Wedding. Ever.
What better way to celebrate the happy couple than by making a batch of one of my favorite cookies the next day? Of course, since they're now in Paris, perhaps I should have made Madeleines!
MEXICAN WEDDING COOKIES
Yield: 4 dozen cookies
1 cup butter, softened
1 cup powdered sugar, divided
1 tsp. vanilla
2 cups flour
1 cup finely chopped pecans
Heat oven to 350 F.
Beat butter, 1/2 cup sugar and vanilla in large bowl with mixer until light and fluffy. Gradually add flour, beating on low speed after each addition until well blended. Add nuts; mix well.
Shape dough into 48 (1-inch) balls. Place, 1-1/2 inches apart, on baking sheets.
Bake 14 to 15 min. or until bottoms are lightly browned. Cool 5 min. on baking sheets. Roll warm cookies, 1 at a time, in remaining sugar in small bowl until evenly coated; place on wire racks. Cool completely.
